Chapter Two: Onto your occupation location.

By the time Roz got her clothes unpacked and put away into the provided cupboards and dressers she heard a distinct rap at the door. While at Uni, the two roommates had made up their own signature knock which was as special as their friendship. Roz ran over to the sunlit glass door, opened it and began shrieking in unison with Lærke. The pair shared a hug for the first time in over a year. They often chatted over FaceTime every Sunday evening since Denmark and the UK only have a one hour time difference. It was a very convenient time for the both of them to catch up on their week. In their more recent calls, the gal pals planned out their first few weeks together in the cordial city of Copenhagen. As Roz gave her bestie a quick tour of her AirBnb, she also gave a quick run down of her first hour in the Danish capital. As they left the flat Lærke walked towards her locked bicycle. "Did you tell me your Airbnb host provides a bicycle for you during your stay?" Lærke queried. Roz held up a bike lock key as she scanned the locked bicycles in the building's courtyard. "Indeed she does, and there, my chariot awaits, a corn-husked coloured cruiser with a basket!" After the two peddled off, Lærke gave an itinerary for the day which all sounded delightful to Roz. First on the list was showing Roz the route to her new job at the restaurant.


Roz and Lærke headed north-east towards the harbourfront and the district in the central part of Copenhagen. Lærke finally used the bike ride as an opportunity to ask Roz for the full story about what really caused Roz's full one-eighty degree life change and the sudden desire to move to Denmark. All Lærke had really gathered from the weekly video calls was that Roz's online food blog had caught the eye of the editor of the blog EATLDN - an incredibly influential website that highlights the best of London eateries as well as covering trends in cosmopolitan cuisine. All Roz could say was that she had acquired an undercover writing assignment with EATLDN. But suddenly one day, about two months ago, when Lærke mentioned that her cousin was about to open his next generation restaurant called Fundament, Roz unexpectedly asked if she could get her a server position there. At the time, Lærke was so ecstatic that Roz wanted to come and work in Copenhagen, she did not immediately question the motive behind the mysterious and sudden move.


But now that they were finally together in person, she felt it was the appropriate time to ask. "Roz, you really never explained what came of that writing assignment you got with EATLDN. You were so stoked about it. Did you end up writing an article?" Lærke inquired. As if she was anticipating the question, Roz took a deep breath and said, "Sort of... You know, in the end it was a bit of a debacle - it'll take a full evening and at least two bottles of rosé to tell the entire tale. Right now I'm more stoked about seeing my new occupation location." "Well, that is perfect timing, actually," Lærke stated, nodding her head towards the white bricked converted warehouse in front of them. It was truly the most gorgeous thing Roz had ever seen in her entire life. Because the restaurant was yet to launch, Roz and Lærke watched as some staff brought some supplies in while a painter finished painting the word FUNDAMENT across the top of the large front window. Roz was immediately caught off guard by the handsome young server who was carrying a box of fresh wild herbs straight from the restaurant's own garden across the lane. She had to squint extra hard to make sure the sun wasn't altering her vision. Once confirmed that the rays were not affecting the young male's appearance, Roz retracted her own opinion that the restaurant was the most gorgeous thing she had ever seen. Lærke snapped Roz out of her trance as she pulled her away, suggesting they explore the rest of the famous Harbour district. The duo hopped back on their bikes crossing the Inderhavnsbroen (inner harbour's bridge) over to the iconic canal district of Nyhavn (New Harbour).There, they parked, grabbed a table and each ordered a beer at one of the many outdoor patios along this most famous and photographed canal.


Lærke explained, "In 1980 Nyhavn quay was pedestrianised; before the iconic harbour district had been used as a parking area." Roz half listening excitedly pointed out yet another child who was a very skilled cyclist. Lærke sighed, "Yes Roz, cycling surprisingly is part of the lifestyle here," hoping to get back to reciting the cool facts about her hometown. Lærke had spent her life mentally storing away these tidbits and factoids for visitors such as Roz - she had an encyclopedias worth of Danish knowledge to bestow on her bestie. "Right, sorry. You were saying something about the pedestrians and my brain cycled back to the bikes,'' Roz smirked at her own pun, mentally writing it down for a future blog intro. Lærke just continued, used to her old roommate's occasional lapses of attention. "Did you know that Copenhagen has the longest pedestrian shopping street in the entire world, cool right?" Lærke knew this would pique Roz's interest. "Really?! On my first day off, that's the first place we shall visit Lærke my love!"


After strolling through Nyvan, the pair rode back to Roz's neighbourhood, where Lærke gave Roz a quick unofficial tour of the surrounding shops, cafés, restaurants and bakeries. Roz was very pleased with the array of wonderful establishments that were truly right outside her door. Just before Lærke peddled away, Roz thanked her for the most interesting outing. She then returned her bike to the gardened courtyard and entered her building. This time she took the vintage elevator to the top floor as her thighs were throbbing from all the bicycle riding. Once inside her Airbnb, she quickly ran to her closet and flung open her newly filled dresser. Purchased a couple days before her flight, Roz inspected her official Fundament server uniform which consisted of a blue denim shirt, black denim jeans and black rubber soled sneakers. She hung the top on one of the dozens of hangers that Astrid had provided and folded the jeans on the shelf stacked above the clothing rod. Roz loved the dress code - it was smart yet casual at the same time. Ever since laying eyes on the mystery server, Roz was counting down the hours until her first shift the following morning. Roz finally threw on her matching pyjama set and crawled into bed. Before setting her 5 wake-up alarms, she quickly made a list in her iPhone of things she couldn't forget the next morning before her shift. "Lozenges, house key, lip balm ... confidence."
