Chapter 5: The Dreaded Arrival of the Unexpected Guest.

The first few weeks literally flew by, thought Roz, as she blissfully made her way to what would most likely be another successful serving shift at FUNDAMENT.  Roz had served many happy customers so far, who in turn, gave many generous tips. One of her favourite aspects of being an honorary citizen of Copenhagen was the fact that she could commute to and from work by bicycle.  The bike commute home always gave Roz an opportunity to decompress and reflect on her day and her new life. As she ticked off another month, Roz recounted all the wonderful blessings that had come her way in her newly adopted city. Roz loved being a server at one of Europe's hippest, tastiest new restaurants. She was so grateful that she not only scored a fab pad on AirBnb, but also, her host, Astrid, was super chill, super interesting, and super nice. Roz was simply enchanted by Copenhagen, she had already seen and done so many cool and amusing things in such a short amount of time. She made the obligatory trip to Tivoli Gardens for another evening of fun and shenanigans. She already walked the 400 steps to the top of the spire of the Church of Our Saviour experiencing the most amazing panoramic view of Copenhagen. She had visited the Torvehallerne, a food market hall, a few times. This Foodie's paradise gratified her soul with just the freshest, tastiest food delights ever.


Of course she had met Preben. Their relationship was moving along at a speed in which Roz was genuinely comfortable. Roz worked five shifts a week, while Preben worked six shifts which were longer, and later than her's. This meant one big date night a week, mixed with some fun afternoon outings.  But the one thing Roz loved most about living in Copenhagen was re-establishing her friendship with Lærke. The former roommates saw one another every three or four days. Roz was also happy that she had come clean with her bestie about the whole EATLDN debacle. The sordid tale was all behind her, or so she thought. The notorious blog resurfaced once again.  During one shift , Mikkel called Roz into his office to show her something on his computer. Roz had no idea why he was showing her his screen, but as he turned his laptop towards her, she could see that he had been browsing the EATLDN blog. Mikkel asked, "Roz, did you have anything to do with this?" Roz stopped following EATLDN immediately after the fallout from "her" article, so she felt immediately sick to her stomach, wondering what in the world he had uncovered. Thankfully it was just a footnote announcing the opening of FUNDAMENT accompanied by a staff photo. Roz could see that she was tagged by name in the pic. Mikkel was pleased with the coverage, even though it was pretty miniscule.


What Roz liked most about the ride to work was it gave her an opportunity to expend some nervous energy, as she was always so hyped before every shift. Part of her excitement was anticipating what she may find on Mikkel's ever changing menu. The second part of her excitement came from the anticipatory thrill she would have just before seeing Preben.  One particular evening, Roz rolled up to the FUNDAMENT warehouse, locked her bike, and entered the restaurant as usual. Roz reported to the small staff room and checked herself in, ensuring that Lars would see her. Then she got the download on that day's menu, quickly learning the new specials, new items and new dessert offerings. She had her two-minute catch-up with Preben. Then Roz hit the dining room floor, ready to greet her first guests. The shift was rolling along just like all the others, until Roz approached a guest seated on his own at a table near the far end of the restaurant.


Roz couldn't believe her eyes, it was Anthony, the restaurant manager from the London restaurant that she put under. For a split second Roz thought of not acknowledging her recognition of him. But then she thought that would be strange, as if she was trying to hide something. "Anthony, so nice to see you. What brings you to Copenhagen?" Roz asked, feigning surprise. Anthony stood, gave Roz a quick hug, replying in his trademark London accent, "Roz, how are you poppet? I'm actually here checking out this restaurant." Roz had to jolt herself to respond, "Ahhh, yes... I'm great." Then she remembered that she had no contact with him since the closure of his restaurant, and said with a consolatory tone, "I was really sad to hear about your family's restaurant. Hope you're all doing okay." Anthony shrugged then said, with a hint of remorse, "Yes. It was really terrible what happened. But the restaurant biz is a tough racket. Me Mum and Dad just packed it in, took early retirement. But my brothers and sister still want to give it another go." Roz could only manage a small smile. "That's why I'm here, checking out new restaurant concepts," admitted Anthony. Roz nodded and said, "Well FUNDAMENT is pretty ahead of the curve from a culinary point-of-view." Anthony smiled and added, "It seems so. I noticed a little piece about it on that EATLDN blog. You know, I still look at that even though its tabloid type coverage brought our family business down. I guess I can't help but keep returning to the scene of the crime." Just as Roz went to hand Anthony the menu, her arm began to tremble. "Roz, you alright? You look like you've seen a ghost. Are they working you too hard here?" Roz managed to pull herself together just long enough to say, "Yes, maybe. But thank goodness I have tomorrow off. I'm going to get the both of us some water. Then I'll go over the menu with you, if that's okay." "Of course Roz. I ain't going anywhere," Anthony confirmed.


As Roz went to the water station, a thousand thoughts raced through her mind. Roz couldn't tell whether or not Anthony had suspected her of being the anonymous journalist who brought down the restaurant. Or was it a complete coincidence that Anthony was there? His story made sense, after all, FUNDAMENT was a next generation restaurant worth noting. Roz decided to play it cool, and just serve him as if he were any other guest. Anthony enjoyed the set menu and ordered a coffee to finish his meal. As Roz was straightening out his table, Anthony asked, "You know Roz, I'm here for another couple days and I do not know a soul in Copenhagen. Do you think we could maybe go out tomorrow? You did say you had the day off." She realized in that moment that she subconsciously felt extremely culpable for what had happened to Anthony's family business. The least she could do was spend some time with him. This could be her atonement.  "Sure Anthony. I'd love to. Let me get your number and I can text where to meet," Roz said in a very cordial tone.


Roz's ride home, after the unforgettable shift, was the least pleasant one to date. When she arrived in her flat she was glad to see that Astrid was still up. Astrid worked for one of Denmark's top design firms. She was a very talented designer who travelled extensively for work. Roz discovered quickly that Astrid was extremely intelligent, very grounded and an excellent listener. Roz disclosed the entire backstory about EATLDN and her role in bringing down Anthony's family restaurant to Astrid. She also described how Anthony had turned up, out of the blue, at FUNDAMENT that evening, revealing that she was to meet up with him tomorrow. Roz expressed her discomfort about going out with Anthony alone as she was still uncertain about his intentions. Astrid suggested that she could tag along as a kind of Danish buffer.


As Roz was about to go to sleep she received a text from Preben. Hej, Lars has surprisingly given me tomorrow off. We can have an extra date night! x Preben. Roz couldn't believe the extraordinarily bad timing of his offer. She didn't want to lie to Preben, so she sent a half-truth reply. Hej. There is this English expression... Great moments in bad timing. This is one of those moments. I had just literally made plans with Astrid. She is not home very often and I think she is also quite lonely. So I would like to go out with her. I'll have to take a raincheck on our date. Hope you understand. Good night. x Roz. With that, Roz turned off her phone as to not engage in any further correspondence. It took Roz quite a bit of time to fall asleep. As Roz tossed about in her bed, her brain also continued to flip flop. Does Anthony know or not that she was actually the deceitful undercover correspondent who devastated his family's business?
